Pumpkin pancakes.

Thursday morning I wanted pancakes for breakfast. Nothing strange right? Well I wanted pumpkin pancakes. In the summer. Weird! Now I can see myself wanting it on chilly morning but on a nice summer day? Either way, that's what I wanted and it's what I made. These pancakes are delicious by themselves. They have a hint of sweetness and they are sooo light and fluffy!

Ingredients.

1 cup Flour
1 cup Milk
1/2 cup Pumpkin puree
2 Eggs, separated
2 tsp Baking powder
1/2 tsp Salt
1 tsp Cinnamon
1 tbsp Sugar
2 tbsp Vegetable oil

In a medium bowl, whisk together the flour, baking powder, sugar, cinnamon and salt.

In a small, whisk the egg yolks, milk, oil and pumpkin puree together.

Pour the egg mixture in the flour mixture. Mix well.

Now whisk your eggs whites until soft peaks form. You can do this by hand or mixer. Soft peaks are when you take your whisk vertically and the peak slowly bends a bit. You don't want stiff peaks when they stand on end.

Now gently fold the egg whites into the pancake batter. Folding it lets in air into the batter and will make the light and fluffy. Do not over mix it.

Pour about 1/4 cup of batter into your hot griddle. Cook for 2 minutes on one side then another minute on the other side.

Voila! Fluffy and tasty pancakes! My craving was satisfied. Mommy is happy, everyone is happy!
