Ciopinno.

Yesterday was a chilly day in Nor Cal. Not much sunlight. I knew I wanted to make something warm and comforting for dinner. I had shrimp, fish and scallops at home so I decided to make Ciopinno. I only had to buy the mussels and clams at Safeway. I also bought a faster way to make this seafood stew. Jars of already made Ciopinno tomato base. lol Read the ingredients first though. Make sure it doesn't contain any chemicals. Ready? Allons-y!

Ingredients.

2 jar Ciopinno Tomato base
1 lb Shrimp, deveined and peeled
1 lb Mussels, cleaned and closed
1/2 lbs Clams, cleaned and closed
1 lb Scallops
1-2 pcs Fish,cut into bite size pieces (cod, tilapia, orange roughy, etc)

Don't you love it when you don't need much ingredients to make a hearty meal?

First empty the jars into a nice wide stockpot. Turn the heat to medium high. Once it starts boiling, drop the clams, mussels and fish pieces. Close lid and let it cook for 15 minutes.

**** if you have any open ones, disregard it. They are dead.****

Once the mussels and clams are cooked (all open), put the shrimp and scallops. Cook for about 5 minutes since those cook quickly.

That's it! Get some good fresh bread and maybe a glass of wine to go with your meal. I ate 2 bowls of it. Belly full and singing. Hope yours will sing too!

I have been wanting to make your soup ever since you posted it. And I thought Christmas eve was the perfect occasion to make it. However, I cannot find the Cioppino tomato base in a jar.

Can you please tell me where you got yours?
