Black and White Bean Salad.

Summer is here and I like to eat salads. My kids and I do. Hubby??? Not soo much. Here's a bean salad that is tasty, quick and really good for you. It's a great side dish when it's too hot to cook. Great with grilled foods or tacos...mmm tacos! Ok, here's the recipe.

Ingredients.

1 can Cannellini beans (or small white beans), rinsed
1 can Black beans, rinsed
1 Small onions, chopped
1/2 tsp Honey
1/8 tsp Cayenne (if you like it spicy, add a bit more)
1 tsp Cumin
3 tbsp Olive oil
Pinch of salt
Bunch of cilantro, chopped

In a medium bowl, add the beans and onions. Set aside.

In a smaller bowl, whisk all the wet ingredients together until it's well emulsified. Add the vinaigrette to the bean salad. Toss well. Add the chopped cilantro and chill in the fridge for about an hour.

I really like this and you probably have all the ingredients in your pantry or fridge. Maybe make some this weekend when grilling some chicken or beef?
